What I'm Cooking...French Onion Soup

I love French Onion Soup!!  Seriously, I love it...especially Baked French Onion Soup.  I love the sweet/salty flavor, the soup soaked bread, and the cheesy goodness baked on top.  Every time I go out to eat, if this soup is offered, I order it.  My favorite Baked French Onion Soup in Milwaukee is at the Lake Park Bistro.  I love it so much we served at our wedding even though it cost us more than the normal soup.

My cousin-in-law, Amanda, had posted the recipe for The Best French Onion Soup...(ever!) on her Facebook page, and I filed it away.  Bill found the recipe, and asked why we had never tried it.  I told him it was because I needed a French Oven* for it, which I didn't have.  My birthday present this year...a 7.25-quart French Oven from Le Creuset!!  We still continued to put off making it though, as the total amount of time to cook the soup is 4 hours (plus prep time).  However, yesterday we finally had a free Sunday, and decided to give it a try.

The result...it was so good!!!  Easily as good as you could find in a restaurant.  We were both so excited and proud of oursevles that it turned out so great. 

The recipe says it is even better on day two, so guess what we're having for dinner again tonight? 

It was actually really easy as well.  The soup is mostly baking for the first 2.5 hours.  Then, there's like 30-45 minutes of intense activity; followed by another 30 minutes or so of simmering.  So, even though it takes 4 hours you're in no way tied to the stove that long.

Here's the French Oven I got for my birthday.  Extra credit to the husband for getting me the purple one!

*French Oven = Dutch Oven. Le Creuset calls them "French Ovens" because they are a French company. I also now prefer calling them French Ovens as the term "Dutch Oven" means something totally different to men. Believe me, do not tell you husband you want a Dutch Oven for your birthday, or he will try and give you one!!
